Homemade Joe’s Crab Shack-Style Crab Cakes
(Makes 4 large cakes)
Ingredients:
For the Crab Cakes:
· 1 lb (450g) fresh jumbo lump crab meat, picked over for shells
· 1/4 cup fine breadcrumbs (Panko pulsed fine, or plain)
· 2 tbsp mayonnaise (full-fat for best binding)
· 1 large egg, lightly beaten
· 1 tbsp Dijon mustard
· 1 tsp Worcestershire sauce
· 1 tsp Old Bay seasoning (a must for that classic flavor)
· 1/2 tsp smoked paprika (adds depth)
· 1/4 cup finely diced red bell pepper
· 2 tbsp finely sliced green onion
· 2 tbsp finely chopped fresh parsley
· Juice of 1/2 a lemon
· Pinch of cayenne pepper (optional)
· Salt and freshly ground black pepper to taste (be careful with salt, as Old Bay and crab have salt)
· 2-3 tbsp unsalted butter or olive oil for frying
For Serving (Classic Joe’s Style):
· Lemon wedges
· Remoulade Sauce (See easy recipe below)

Easy Remoulade Sauce:
· 1/2 cup mayonnaise
· 1 tbsp Dijon mustard
· 1 tbsp capers, chopped
· 1 tbsp pickle relish or finely chopped cornichon
· 1 tsp fresh lemon juice
· 1 tsp hot sauce (like Crystal or Tabasco)
· 1/2 tsp smoked paprika
· 1 small garlic clove, minced
· Salt and pepper to taste
· Mix all ingredients in a bowl, cover, and refrigerate for at least 30 minutes before serving.
