One of the biggest concerns surrounding egg yolks is cholesterol. A single yolk contains around 180–200 milligrams of cholesterol, which once caused many doctors to warn patients against eating too many eggs.

However, newer studies suggest that dietary cholesterol does not affect everyone the same way. For many healthy people, eating eggs in moderation may have little impact on blood cholesterol levels. Some experts now believe that processed foods, excess sugar, and trans fats may play a larger role in heart disease risk than eggs themselves.
